Who am I?

My name is Flore, I am French and I have decided to settle in the center of the Belgian capital.

Since my childhood, I’ve had a passion for culinary art. My mother and my grandmother have handed down the love of French cuisine as well as some culinary secrets from the family…

Searching for new inspiration, I’ve recently explored new culinary avenues, learning tricks-of-the-trade along the way at the Ritz in Paris, where I was able to learn from well known Chefs such as Eddy Benghanem (Chef patissier) and Michel Roth (Chef, Meilleur Ouvrier de France).

 

What is my style of cooking?

Above all, it’s warm-hearted and convivial. For me, cooking is more than anything a moment of sharing.

I give a lot of importance to the quality of the products that I cook, and I always try to know their origins and history. The way a meal is presented in a dish is also very important to me: true love starts with a glance!

I like to cook traditional recipes, like tenderloin of pork “en croûte” ( encased in pastry), but it is essential for me to associate it with a sense of modernity such as a cream of artichoke or a “concassé de tomate” (crushed tomatoes) seasoned with orange. As for the dessert, I can’t resist a chocolate cake, the flavour of which is delicately boosted by a trace of ginger…

Proud of the French culinary culture, I like specialities of France’s regions, but I am also open to other horizons: curry, hummus, tajines, I like venturing in worldwide cuisine!

In a nutshell, anchored in French and Mediterranean cuisine, my cooking style suits our time, it is resolutely contemporary but also warm hearted and convivial!
